HEALTHYISH VEGAN BROWNIES

Zoe is a dear friend of mine and also is a bit of a health foodie :)


Here she shares with me a recipe of a healthy alternative to baking brownies without flour and processed sugars and instead with black beans, flaxseeds, chia, cocoa & honey.



































INGREDIENTS


2 heaped tablespoons of chia seeds

6-8 tablespoons of water


4 tablespoons of coconut oil

2 cans of black beans

3 tablespoons of flax seed

1 cup cocoa powder

Pinch of salt

Squirt of vanilla extract

Teaspoon baking powder

Maple syrup or honey to your liking.


Extras - any nuts, chocolate chips, cinnamon, dark chocolate, flaky sea salt (Maldon!)
















RECIPE


Mix 2 heaped tablespoons of chia seeds with 6-9 tablespoons of water.


Stir every now and then until it creates a gel like “chia egg” - this can take around 10 mins.


While “gel-ing”, pre-heat oven to 350 F and grease a rectangular baking pan with coconut oil.


Rinse and drain 2 cans of black beans and add in blender with 3 big tablespoons of flaxseed, 1 cup of cocoa powder, pinch of salt, squirt of vanilla extract, teaspoon of baking powder and a guzzle of honey or maple syrup to your liking of sweetness.


Feel free to throw in extras if you like nuts, chocolate chips, seeds, cinnamon etc.


Blend with 4 big tablespoons of coconut oil - preferably melted if you have the time.


Blend (she’ll be thick!) and pour into the pan and spread out. Add any toppings you want - I usually go for tahini and here I went for nuts, dark chocolate chips and flaky sea salt.


Put her in the oven and bake for 35-40 mins and do the fork test.


Let it cool :)
